About the Author

Wendi Washington-Hunt is an AIP foodie, food photographer, and recipe developer. When Hashimoto's Thyroiditis entered her life, she began diet and lifestyle changes to help her condition. Now, Wendi lives happily in an empty nest in North Carolina with one amazing husband and one spoiled yellow lab, where she spends her time making food and taking pictures of it.

Before becoming a food photographer and a blogger at Wendi's AIP Kitchen, Wendi was a professional opera singer, martial arts practitioner, and piano and voice teacher. She has used these experiences to inspire her creativity and to encourage others to make a mess in their kitchens. It is her passion to help readers savor this new way of eating, rather than being restricted by it.

"With The Autoimmune Protocol Baking Book, Wendi has delivered an exquisite collection of masterful recipes that solve the complex chemistry of Autoimmune Protocol (AIP) baking with straightforward ingredients and simple techniques. This cookbook is a must-have for every AIP kitchen!"--Dr. Sarah Ballantyne, Ph.D., New York Times bestselling author of The Paleo Approach and Paleo Princ
"If you are searching for baking recipes that are AIP-compliant, simple to execute, and taste fantastic, this is your must-have cookbook! This masterful recipe collection ensures no AIP'er has to go without their favorite baked goods and treats." --Mickey Trescott, author of The Autoimmune Paleo Cookbook
"Wendi is one of the most popular recipe bloggers in the AIP community for a reason. When you get this cookbook, you'll see why! She tests every recipe multiple times to get it just right. She is also an artist behind the camera, creating mouthwatering photography alongside the delicious recipes. And while many cookbook introductions might be a little boring, this one is not! It's filled with AIP baking tips, best practices, troubleshooting, and a healthy dose of humor. It's like having a friendly AIP baking instructor in the kitchen with you."--Eileen Laird, author of A Simple Guide to the Paleo Autoimmune Protocol
